The Dragster

A cold carbonated adventure for the whiskey lover. It’s the classic combination of ginger and whiskey with a touch of zing from the lime. Enjoy this whiskey forward cocktail in the comfort of our warm and inviting Lobby Bar or next to a crackling campfire outside in our handcrafted adirondack chairs.
Ingredients:
1 oz Redwood Rye or Humboldt Distillery Whiskey
Ginger Ale
- Lime
Directions:
In a glass filled with ice add Whiskey or Rye, a hefty squeeze of lime and top it off with ginger ale. Simple and delicious.
COVID Cure No. 3

A refreshing Whiskey Collins featuring Brew Dr.’s Wildberry Ginger Kombucha. This is one of the only Kombuchas I find suitable for mixing. It has enough tang to balance a sweet liquor like Bourbon, without the dreaded mustiness of so many kombuchas. It comes across more as a shrub soda rather than a health drink.
Ingredients:
- 1/2 oz Lemon juice (or Lime)
- 1/2 oz Domain Canton Ginger Liquor
- 1 1/2 oz Bourbon
- 3 - 5 oz Wildberry Ginger Kombucha (or Ginger Beer if not available.)
- Salt
- Lemon slice and zest (or lime)
Directions:
Rim a glass with salt and lemon zest. In a cocktail shaker, shake lemon juice, Domain Canton Ginger Liquor, and bourbon. Pour over ice. Fill glass with kombucha and stir. Garnish with lemon slice.

Unguided Expedition

Mocktail! A beautiful herbal combo of sweet, sour, and floral. The benefits of this blend are anti-inflammatory and antioxidants for overall health.
Ingredients:
- Chamomile
- Hibiscus
- Rosehips
- Rose Petals
- Lemongrass
- Orange Peel
- Lemon Peel
- Mango
- Blood Orange
Directions:
Brew a tea with all the listed ingredients. Serve hot or over ice, with a fresh slice of lemon. Sweeten to taste with a local honey, raw sugar, or enjoy the benefits as it is.
Wonder Bar Old Fashioned

A true, and timeless classic. This cocktail features ingredients done right. The Old Fashioned is one of the oldest drinks in the cocktail cannon. The Wonder Bar Old Fashioned is a perfectly balanced crowd pleaser.
Ingredients:
- Bourbon
- Demerara Syrup
- Aromatic and Orange Bitters
- a Large Ice Cube
- Luxardo Cherries
- Fresh Orange Peel
Directions:
In a pint filled with ice, add 2 oz of the Bourbon or Whiskey of your choice, two dashes of bitters, 1 tsp of Demerara Syrup and stir for 15-20 seconds. Strain and pour over a large ice cube in a rocks glass. Add a fresh orange peel and a Luxardo Cherry skewer.
Whiskey Sour

A frothy smooth execution of flavors. This classic cocktail needs to be experienced. If you have never had a whiskey sour this way you don’t know what you’re missing.

Velvet Forest

The Velvet Forest features Falernum, a sweet rum based liqueur from the Caribbean. With flavors of ginger, lime, and almond, as well as spices, it’s used mostly in tropical cocktails. I honor the tiki tradition in a dual liquor (Gin and Bourbon) concoction with plenty of lime.
Ingredients:
- 1 oz. Dry Gin
- 1 oz. Old Forester or any fine Bourbon
- 1 oz. Velvet Falernum
- Juice of 1/2 Lime
Directions:
Shake on ice and pour on crushed ice, or as a Collins with 3-4 oz. soda water.

Mountain Martini

When making the drink for yourself, it’s imperative that you start with good ingredients—after all, there’s no place to hide in such a straightforward cocktail.
Ingredients:
2 1/2 ounces gin
1/2 ounce dry vermouth
1 dash bitters
Lemon twist
Directions:
Add the gin, dry vermouth and bitters into a mixing glass with ice and stir (or shake) until very, very cold. Strain into a chilled cocktail glass. Garnish with a lemon twist.

The Monster Mary

Our first-class Bloody Mary taken to the next level. Packed to the brim with pickled vegetables, fresh cooked Bacon, Focaccia, and a one of a kind bloody mary infused slider. Made custom by Chef Ellie.
Ingredients
- 1.5 oz Vodka
- 1/2 tsp Horseradish
- 1/2 oz Lime Juice
- 1/2 oz Olive Juice
- Several dashes of hot sauce
- Several dashes of Worcestershire Sauce
- Tomato juice
Directions:
When making at home. In a pint glass filled with ice, add Vodka, a few dashes of your favorite Hot Sauce, Horseradish, Celery Salt, black pepper, a few dashes of Worcestershire Sauce, olive Juice, and lime juice. Top with tomato juice and shake well. Pour into a fresh pint glass. Top with pickled vegetables, snacks of your choice, and enjoy.
Blood Orange Margarita

Fresh squeezed lime, house made sweet and sour, fresh squeezed blood orange juice, tequila, countreau, and garnished with a dehydrated blood orange slice sprinkled in cinnamon.

Lost Coast Lemonade

This refreshing drink features a local vodka and fresh strawberries.
Ingredients:
- 1/2 oz Lemon juice (or Lime)
- 1/2 oz Domain Canton Ginger Liquor
- 1 1/2 oz Bourbon
- 3 - 5 oz Wildberry Ginger Kombucha (or Ginger Beer if not available.)
- Salt
- Lemon slice and zest (or lime)
Directions:
Muddle strawberries and basil at bottom of a pint glass, add vodka and muddle a bit more. Add lemonade and ice, top with soda water and stir
North Jetty Rum Punch

A fruity sweet and sour flavor, with a kick of locally distilled rum. Served over ice for a refreshing finish to any day. Enjoy from the comfort of the green velvet couch in the Jetty or cozy up next to a warm fire on the leather seats in our hangar.
Ingredients
- 1.5 oz Humboldt Distillery Rum
- Pineapple juice
- Orange juice
- Lime
Directions:
Add rum to a glass with ice, add equal parts pineapple juice and orange juice to the brim, top it off with a squeeze of fresh lime juice, give it a little stir and enjoy.
La Mantis

Our take on a margarita. When served with the Tajin rim it adds a touch of spice to this classic.

Donna's Drink

In honor of Donna Wright. She called it the “super happy fun time”. She was such a shining star and is greatly missed. We made this cocktail for a Eureka Chamber event.
Ingredients:
- Gin
- Blueberry syrup
- Lemon bubbly water
- Fresh blueberries for garnish
- Fresh Mint for garnish
Directions:
Mix gin, syrup, bubbly water together. Pour over ice. Garnish with blueberries and mint.
