01. Demonstration of knowledge.
Conditions Observed: Staff working at the time of inspection were unaware of proper warewashing and sanitizing procedures for food contact surfaces.
ROACHY SAYS:
“The Person In Charge (PIC) and all employees shall have adequate knowledge and shall be properly trained in food safety as it relates to their assigned duties. The PIC shall have adequate knowledge of major food allergens, foods identified as major food allergens, and the symptoms that a major food allergen could cause. The PIC means a designated person who has knowledge of safe food handling practices and the major food allergens as they relate to the specific food preparation activities that occur at the food facility. 02. Food safety certification, food handler card compliance
Conditions Observed: The facility is currently without a Food Safety Certified (FSC) owner or employee. Corrective Action: within 60 days of this inspection ensure that the facility has at least one FSC owner or employee, and a copy of their certification is kept on-site and available for review during inspections.

Conditions Observed: Paper towel dispenser in the employee restroom was empty. Corrective Action: ensure that all dispensers for toiletry items (soap, paper towels and toilet paper) are stocked and in working condition.

Conditions Observed: Water temperature at the 3-compartment sink intended for warewashing was measured at 93 Fahrenheit. Facility must cease providing any and all non-prepackaged food/drink until water temperature can be provided at a minimum of 120 Fahrenheit for proper warewashing and sanitizing.
ROACHY SAYS:
“An adequate, protected, pressurized, approved potable supply of hot and cold water shall be provided at all times. Hot water shall be supplied at a minimum temperature of 120F when measured from the faucet. The temperature of water provided to handwashing facilities shall be at least 100F. Handwashing facilities equipped with non-adjustable faucets shall have their temperature set between 100F and 108F. Hot water shall be provided at the food preparation sink and janitorial sink. Conditions Observed: 3-compartment sink lacks an adequate means of closing the drains (drain valves or drain plugs). There was no means to check the concentration of the sanitizing solution required for warewashing (e.g. test strips).

Testing materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing. Conditions Observed: Observed missing and damaged ceiling tiles in the dish room/store room. Observed holes in the wall above the 3-compartment sink. Corrective Action: ensure that all ceiling tiles are intact and in good condition, and plug/repair holes in wall to prevent possible entry of vermin.

Reinspection scheduled to assure DHS that violation is corrected.

Wiping cloths shall be free of food debris and visible soil.
