Conditions Observed: No paper towels in dispenser at the handwashing sink. Employee provided paper towels. COS. Keep handwashing sinks properly stocked with pump soap and paper towels at all times.

Handwashing facilities shall be clean, unobstructed, and accessible at all times. Handwashing facilities shall be provided with soap and sanitary single use towels in approved dispensers. 08. Proper hot and cold holding temperatures.

Conditions Observed: Observed some foods on the buffet held out of temperature today (cheese, 63 F; cream cheese, 56 F; 61 F). Observed cream cheese pulled to be discarded. Staff agree to keep cream cheese in the grab and go fridge next to the bagels. Discard any remaining cheese at the end of service today. COS. Cold-hold dairy at 41 F or below.

“Except during preparation, cooking, cooling, transportation to or from a retail food facility for a period of less than thirty minutes, when time is used as the public health control, or as otherwise specified, potentially hazardous foods shall be maintained at or below 41F or at or above 135F. The following foods may be held at or below 45F: raw shell eggs, unshucked live molluscan shellfish, pasteurized milk and pasteurized milk products in original sealed containers, potentially hazardous foods held during transportation. Potentially hazardous foods held for dispensing in serving lines and salad bars may be held at 45F, not to exceed 12 hours in a 24 hour period, if unused portions are discarded. Conditions Observed: No food cards available for review. Keep food cards on file at the facility. Be able to make the file available to DEH upon request.

“Food facilities that prepare, handle, or serve non-prepackaged potentially hazardous food, shall have an owner or employee who has passed an aproved food safety certification examination. Food handlers that prepare, handle, or serve non-prepackaged potentially hazardous food, shall obtain a valid Food Handler Card within 30 days after date of hire. (113947.1-113947.5, 113948)”

Conditions Observed: Observed packets of cream cheese on the counter with no temperature control. Employee will discard at the end of breakfast service - COS. Keep cream cheese at 41 F or below. Measured yogurt in the large dispenser to be 45 F. Adjust/service/repair to cold-hold at 41 F or below.

Conditions Observed: Integral thermometer in counter-top fridge was not operational today. Repair or provide a thermometer for this fridge.

ROACHY SAYS:

“An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be available to the food handler. Thermometers shall be calibrated in accordance with manufacturer's specifications as necessary to ensure their accuracy. A thermometer +/- 2 degrees F shall be provided for all refrigerators, hot and cold holding units, and high temperature warewashing machines. (114157, 114159)”

01. Demonstration of knowledge; food safety certification.

Conditions Observed: No current food safety manager for the facility. Obtain a valid food safety manager certificate and submit to DEH within 60 days to avoid re-inspection.

“The Person In Charge (PIC) and all employees shall have adequate knowledge and shall be properly trained in food safety as it relates to their assigned duties. The PIC shall have adequate knowledge of major food allergens, foods identified as major food allergens, and the symptoms that a major food allergen could cause. The PIC means a designated person who has knowledge of safe food handling practices and the major food allergens as they relate to the specific food preparation activities that occur at the food facility. Conditions Observed: Observed soap and paper towel dispensers at handwash sink in kitchen were empty; dish soap being used to wash hands and paper towels on shelf above. Keep dispensers stocked at all times to ensure adequate handwashing.

Conditions Observed: Observed faucet at three-comp sink leaking. Repair.

ROACHY SAYS:

“Steam tables, ice machines, ice bins, food preparation sinks, display cases, walk-in refrigeration units, and other similar equipment that discharge liquid waste shall drain into a floor sink with an air gap or other approved type of receptor. All plumbing and plumbing fixtures shall be installed in compliance with applicable local plumbing ordinances, maintained so as to prevent any contamination, kept clean, fully operative, and in good repair. The potable water supply shall be protected with a backflow or back siphonage protection device. Any hose used for potable water shall be of approved materials, labeled, properly stored, and used for no other purpose. 43. Toilet facilities: properly constructed, supplied, cleaned.

Conditions Observed: Observed restroom door open. Restroom doors must be kept closed except during maintenance operations. Install self-closing hinge on restroom door to keep closed.

ROACHY SAYS:

“Toilet facilities shall be maintained and kept clean. Toilet rooms shall be separated by a well-fitting, self-closing door. Toilet tissue shall be provided in a permanently installed dispenser at each toilet. (114250, 114250.1, 114276)”
