Conditions Observed: REPEAT VIOLATION: Observed large amounts of grease accumulation beneath deep fryers and between equipment at cookline. Please clean and maintain clean. Interior of deep fryers observed clean and empty. Thank you. A re-inspection has been scheduled for assuring DEH that floor had been deep cleaned. A re-inspection fee of $133.00/hr will be invoiced. Observed floor beneath undercounter refrigerator with debris accumulation. Please deep clean.

Repair large gaps and holes in the wall located beneath and behind 3 compartment sink. Replace missing tiles and broken located at wall beneath 3 comp sink and public front serving line. This inspection serves as a compliance order to meet CALCODE requirements within 15 business days ( February 13, 2020). Please be advised that DHS will follow-up at the end of the 15 business days to assurance that compliance has been met. If operator has not met by said date a $133.00/hr fee will apply. Each and every follow-up inspection will be invoiced at the referenced fee. This notice includes # 36 notation.

Conditions Observed: Encountered a lack of tracking labels for hamburger assembly condiments. Please provide labels to monitor Time as a Public Health Control. Obtained verbal for time. Discussed TPHC. Corrected on site by manager.

“When time as a public health control is used, the following procedures shall be observed: food items shall be marked to indicate four hours past the time when the food was removed from temperature control, food shall be served or discarded within the four hour time limit. Written procedures shall be maintained in the food facility and made available to the enforcement agency upon request, that ensure compliance with this section and section 114002, for food that is prepared, cooked, and refrigerated before time is used as a public health control. 08. Proper hot and cold holding temperatures.

Conditions Observed: Grilled chicken breasts in hot holding unit, holding a temperature between 110-124.5.F.Temperature of chicken off the grill at 169.3F. Hamburger patties in hot holding unit holding a temperature between 122-129F. Hamburgers off the grill cooked at 159.2F. All temperature abused hot holding items VC&D. Hot holding unit, holding a temperature of 222 and 179F. Per employee unit not functioning at opening and had to be reset.

ROACHY SAYS:

“Except during preparation, cooking, cooling, transportation to or from a retail food facility for a period of less than thirty minutes, when time is used as the public health control, or as otherwise specified, potentially hazardous foods shall be maintained at or below 41F or at or above 135F. The following foods may be held at or below 45F: raw shell eggs, unshucked live molluscan shellfish, pasteurized milk and pasteurized milk products in original sealed containers, potentially hazardous foods held during transportation. Potentially hazardous foods held for dispensing in serving lines and salad bars may be held at 45F, not to exceed 12 hours in a 24 hour period, if unused portions are discarded.
