08. Proper hot and cold holding temperatures.

Conditions Observed: Measured foods in the prep fridge to be above 41 F (chimichuri sauce, 51F; chopped tomato, 47 F, potatoes, 45 F/61F). Potatoes are frequently pulled and returned to the fridge as orders are filled. Revise cold-holding to keep foods at or below 41 F. Observed a container of sour kraut dated 10/26 resting on a shelf at ambient temperature. Fermentation at room temperature requires a HACCP. Obtain a HACCP or keep under temperature control.

37. Equipment, utensils and linens: storage and use.

Conditions Observed: Observed spoons for smoothie addittions resting in containers of water. Keep spoons on a clean, dry, sanitized surface or in water at 135 F or greater. See regulation description.

ROACHY SAYS:

“Clean equipment, utensils, linens, and single-use articles shall be stored at least six inches above the floor in an approved location within the fully enclosed permitted food facility. Clean equipment, utensils, linens, and single-use articles shall not be exposed to splash, dust, vermin, or other forms of contamination. Non-food items shall be stored and displayed separate from food and food-contact surfaces. During pauses in food preparation utensils shall be stored with handles above the top of the food, on a clean sanitized surface, in running water, or in water that is at least 135øF. Single-use articles and multiservice utensils shall be handled, displayed, and dispensed so that contamination of food and lip-contact surfaces is prevented. Extra preset tableware shall be removed when a consumer is seated or cleaned and sanitized before further use. Pressurized cylinders shall be securely fastened to rigid structure. Linens must be free of food residue and soil and be laundered as required. 40. Wiping cloths: properly used and stored.

Conditions Observed: Initially measured 0 PPM chlorine in the sani-buckets at the front counter. Employee obtained bleach and added a capful to each bucket. Measured chlorine to be 100 PPM. COS. Keep sani-buckets at 100 PPM chlorine.

“Wiping cloths used to clean food spills shall be used only once or stored in a sanitizing solution of an approved concentration as specified in section 114099.6. Dry or wet cloths that are used with raw foods of animal origin shall be kept separate from cloths used for other purposes, cloths that come into contact with raw foods of animal origin shall be kept in a separate sanitizing solution. Wiping cloths shall be free of food debris and visible soil. Measured major temperature violations in beverage fridge today (hibiscus tea, 57 F, almond milk, 57 F). Thermometer in fridge reads 60 F. PIC pulled PHF to be discard - thank you. Milks made after the lunch rush can be brought to a fridge at or below 41 F. Adjust/service/repair to cold-hold PHF at 41 F or below. Discontinue use of this fridge until servicing or repairs are complete. Provide proof of correction prior to 4 PM on 7/3/21,

Conditions Observed: No thermometer in the deli prep fridge to the left of the gril. PIC provided a thermomter for the this fridge. COS.

Thermometers shall be calibrated in accordance with manufacturer's specifications as necessary to ensure their accuracy. Conditions Observed: Observed steaming pot in handwashing sink behind from the service counter. Keep handwashing sinks empty and stocked at all times. Avoid placing dishes in handwashing sinks.

Conditions Observed: Measured foods in the top left side of the far deli prep to be above 41 F (basil sauce, 50.5; chopped tomatoes, 49 F; ranch dressing, 57 F). See measured observations. Discussed possible cause of warm pocket (e.g., build-up on condensers) and maximizing the volume of food that is in direct contact with refrigeration. Adjust/service/repair to cold-hold at 41 F. This violation requires proof of correction by 6/12/2020. A reinspection may be required.

Conditions Observed: At the facility for reinspection of violation #8. Measured rice to be below 135 F. Operator will discard remaining rice. Rice will be cooked and then hot held in the countertop steam table. Per Owner, a new rice cooker has been order and should arrive before the end of the week. Discussed possible electrical concerns - please check in with your electrician and send a follow up email to your inspection.

Conditions Observed: Food Safety Manager certificate has expired. Please provide EH with a copy of current Food Safety Manager certificate by 1/31/20.

Conditions Observed: Measured brown rice in the steamer to be 133 F in the center and 124 F on the edge. Discard remaining rice. Adjust/service/repair to hot hold rice at 135 F or greater. This violation requires a reinspection on/after 11/22/19. Measured minor temperature violations in the left deli prep (cheese, 49 F; sliced tomato, 45 F, pinto beans, 44 F). Adjust/service/repair to cold-hold at 41 F or below. As discussed during the inspection, avoid putting hot foods in this unit.

Conditions Observed: Observed the use of a bowl as scoop for potatoes. Use a utensil that has a handle. Keep handle up and out of food.

All new and replacement equipment shall be properly installed and be certified or classified for sanitation by an ANSI accredited certification program. Electrical appliances must meet UL standards. Single-use articles shall not allow migration of deleterious substances or impart colors, odors, or tastes to food. Multi-use food contact surfaces must be smooth, free of breaks, chips, and similar imperfections; free of sharp internal angles, corners, and crevices; finished to have smooth welds and joints; be accessible for cleaning and inspection. Unless specified, wood and wood wicker may not be used as a food-contact surface. Unless specified, copper and copper alloys such as brass may not be used in contact with a food that has a pH below six or for a fitting between a backflow preventer and a carbonator. Beverage tubing and cold-plate beverage cooling devices cannot be installed in contact with stored ice intended to be used as food. Equipment that is not movable must be installed to allow for cleaning in place. Cutting or piercing parts of can openers must be readily removable. Conditions Observed: Measured chlorine in sanitizing bin to be 50 PPM. Dishwasher twice added more chlorine - measured chlorine to be 100 PPM. COS. Use 1 teaspoon of bleach per gallon of cool water. Use test strips.

“Food-contact surfaces and utensils shall be clean to sight and touch. Food-contact surfaces and multiservice utensils shall be effectively washed, rinsed, and sanitized to remove or completely loosen soils by use of manual or mechanical methods. Precleaning may be required. Manual sanitization shall be accomplished during the final rinse by contact with solution containing 100 ppm available chlorine, 200 ppm quaternary ammonium, or another approved sanitizer. Conditions Observed: Measured brown rice prepared on 1/22/19 to be 49 F. Operator discarded rice. Reviewed rapid cooling per CalCode. See regulation description above. Operator has hotel and sheet pans. Measure cooling foods frequently. Use a cooling log. This violation requires a reinspection on/after 1/28/19.

ROACHY SAYS:

“After heating, potentially hazardous foods shall be rapidly cooled from 135F to 70F within 2 hours, and then from 70F to 41F within 4 hours. Potentially hazardous foods prepared from ambient temperature ingredients must be cooled to below 41F within 4 hours. Cooling shall be facilitated by one or more of the following methods: in shallow pans, separating food into smaller portions, adding ice as an ingredient, using an ice bath and stirring frequently, using an ice paddle, using rapid cooling equipment, or using containers that facilitate heat transfer. 15. Food contact surfaces: clean and sanitized.

Conditions Observed: Measured chlorine in the sanitizing bin to be 50 PPM. Operator added 1-2 additional caps full of bleach. Measured chlorine to be 100 PPM. COS. Use 1 teaspoon of bleach per gallon of cool water (or approximately 3 caps of bleach to a half-full sink).

Conditions Observed: Observed kitchen door to be open at the time of inspection. Keep door closed to prevent vermin ingress.

“All premises of a food facility shall be kept clean, fully operative, and in good repair. The premise of a food facility shall be free of litter and items unnecessary to the operation of the facility. Areas designated for employees to eat and drink shall be located so that food, clean equipent and utensils, linens, and single-use articles are protected from contamination. Personal items shall be stored in a designated area to prevent contamination of food or utensils. Food prep sinks, warewashing sinks, and handwashing sinks shall not be used for the cleaning or maintenance of tools or cleaning supplies or to dispose of mop water and similar liquid wastes. A dedicated janitorial sink with a drain shall be provided and conveniently located. A separate room, area, or cabinet shall be provided for cleaning supplies. The facility shall be kept vermin proof. Insect electrocution devices shall retain the insect within the device and shall not be located over food or utensil handling areas.
