Routine Inspection
01. Demonstration of knowledge.

Conditions Observed: Food Safety Certificate holder was unable to describe or demonstrate proper sanitizing procedure and use of test strips to verify concentration of sanitizing solution. Ensure all employees are knowledgeable regarding food safety practices as they relate to the job.

ROACHY SAYS:

“The Person In Charge (PIC) and all employees shall have adequate knowledge and shall be properly trained in food safety as it relates to their assigned duties. The PIC shall have adequate knowledge of major food allergens, foods identified as major food allergens, and the symptoms that a major food allergen could cause. The PIC means a designated person who has knowledge of safe food handling practices and the major food allergens as they relate to the specific food preparation activities that occur at the food facility. 22. Hot and Cold Water Available

Conditions Observed: Highest water temperature initially measured at 3-compartment dishwashing sink was 98 degrees Fahrenheit (F). Operator stated that existing small size heater can become depleted with hot water usage; food contact surfaces are cleaned and sanitized at end of night when heater is full. At end of inspection water temp. measured at 122 F. This violation was Corrected On Site. Recommend installing larger sized hot water heater or on-demand hot water heater to provide more consistent supply of hot water.

ROACHY SAYS:

“An adequate, protected, pressurized, approved potable supply of hot and cold water shall be provided at all times. Hot water shall be supplied at a minimum temperature of 120F when measured from the faucet. The temperature of water provided to handwashing facilities shall be at least 100F. Handwashing facilities equipped with non-adjustable faucets shall have their temperature set between 100F and 108F. Hot water shall be provided at the food preparation sink and janitorial sink. 43. Toilet facilities: properly constructed, supplied, cleaned.

Conditions Observed: Encountered unclean toilet bowl located inside employee restroom. Please clean and sanitize daily.

ROACHY SAYS:

“Toilet facilities shall be maintained and kept clean. Toilet rooms shall be separated by a well-fitting, self-closing door. Toilet tissue shall be provided in a permanently installed dispenser at each toilet. (114250, 114250.1, 114276)”

45. Floor, walls, and ceilings: built, maintained, clean.

Conditions Observed: Observed old debris and plastic wrappers on floor in walkin refrigerator, located at the reach in area near gatorade. Please maintain tidy.

ROACHY SAYS:

“Food facilities shall be fully enclosed in a building consisting of permanent floors, walls, and an overhead structure that meets minimum standards. The walls and ceiling shall be smooth, durable, nonabsorbent, and easily cleanable. Flooring and base coving shall be smooth, durable, and made of approved nonabsorbent material that is easily cleanable. Floor surfaces shall be coved at the juncture of the floor and wall with a 3/8 inch minimum radius and shall extend up the wall at least 4 inches.
