Conditions Observed: Measured cut veggies in the far cold-hold to be above 41 F (onions, 45 F; cabbage, 61 F). Revise cold-holding procedure to cut veggies at 41 F or below.

Conditions Observed: Observed pink slime-like build-up and black streaking on front and bottom of divider in ice machine. Showed observations to the Owner and reviewed how to effectively sanitize (e.g., remove build-up with a mild cleanser prior to sanitize surface). Clean and sanitize; clean routinely to avoid build-up. Provide proof of correct via email to your Inspector prior to 4 PM on 1/26/2021.

Conditions Observed: Observed build-up on the following surfaces: handle of flour scoop, bottom interior of lids storage bin, container for ice scoops at the soda fountain, on the upper corners of the interior of the ice machine. Scoop, lids and bin, and container were brought to the 3-part sink. Remove build-up; clean and sanitize routinely.

10. Proper cooling methods.
Conditions Observed: Measured salsa in bucket to be 123 F at 2:15. Salsa was decanted to self-serve pitchers and the remainder was placed in the walkin. Measured remaining salsa to be 105 F at 3:35 PM. Salsa in bucket is not cooling fast enough. Operator transferred to a stainless steal container and brought to freezer. Revise cooling method to cool foods quickly. This violation requires a reinspection on/after 8/22/19.
ROACHY SAYS:
“After heating, potentially hazardous foods shall be rapidly cooled from 135F to 70F within 2 hours, and then from 70F to 41F within 4 hours. Potentially hazardous foods prepared from ambient temperature ingredients must be cooled to below 41F within 4 hours. Cooling shall be facilitated by one or more of the following methods: in shallow pans, separating food into smaller portions, adding ice as an ingredient, using an ice bath and stirring frequently, using an ice paddle, using rapid cooling equipment, or using containers that facilitate heat transfer.
