Conditions Observed: Observed buckets in the handwashing sink at the grill. Employee moved buckets to a shelf - COS. Keep handwashing sink empty and unobstructed at all times to allow for frequent and hygienic handwashing.

10. Proper cooling methods.
Conditions Observed: Measured geometric center of the grain/lentil dish prepared on 8/29 to be 43 F (measured edges to be 41, 40 F). As discussed during the inspection, revise cooling procedure to ensure that all parts of the food item reach 41 F or below in the specified time frame. Train staff to measure the core temperatures of cooling foods.
ROACHY SAYS:

Conditions Observed: Observed excessive moisture in/on stacked ozzie containers. Showed observations to lead chef, who instructed dishwasher to rest containers on the longer side for more effective air dryer - COS. Continue to air dry containers. Avoid stacking/nesting wet containers.

Conditions Observed: Measured a dramatic temperature gradient in the far left well of the east steam table today (hamburger, top of bin - 111 F, hamburger, bottom of bin, 140 F; grilled chicken, top of bin, 114 F, bottom of bin, 141 F). PIC pulled burgers, grilled chicken to be discarded; discussed corrective action (holding in a broth, ensuring an adequate volume of water in the well). COS. Consider using lids. Adjust/service/repair to hot hold all foods at or above 135 F. Measured foods in the far side of the sandwich station to be above 41 F (sprouts, 46 F; pickles, 47 F). Showed observations to PIC. Adjust/service/repair to cold hold at 41 F or below.

Wash, rinse, and sanitize nozzles routinely (i.e., every evening, every shift) to avoid build-up. Observed build-up on a few coffee cups. Employee brought to 3-part sink. COS. Scrub cups to remove build-up. Observe employee washing spatulas and spacers in the large, single sink near the milk box. Wash all utensils via the 3-compartment method at your 3-part sink. Areas designated for employees to eat and drink shall be located so that food, clean equipent and utensils, linens, and single-use articles are protected from contamination. Personal items shall be stored in a designated area to prevent contamination of food or utensils. Food prep sinks, warewashing sinks, and handwashing sinks shall not be used for the cleaning or maintenance of tools or cleaning supplies or to dispose of mop water and similar liquid wastes. A dedicated janitorial sink with a drain shall be provided and conveniently located. A separate room, area, or cabinet shall be provided for cleaning supplies. The facility shall be kept vermin proof. Insect electrocution devices shall retain the insect within the device and shall not be located over food or utensil handling areas.
