Conditions Observed: Measured foods in the hot bar below 135 F (chicken wing, 87 F; chicken wing, 107 F; potatoes, 127 F). Per Deli Lead, chicken wings were made around 9 am. Pull and discard remaining chicken wings and potatoes prior to noon. Revise your hot holding procedure to keep foods at or above 135 F. This violation requires a reinspection on/after 10/22/21.

Conditions Observed: Observed a minor amount of dried meat debris on back gasket of mixing arm and on mixing arm. Showed observations to the meat department lead. Remove debris, clean and sanitize impacted surfaces. Consider using a step stool or supplemental lighting for easier cleaning.

Precleaning may be required. Conditions Observed: Observed stock tags kept in a disorganized pile today. Employee organized stock tags, explaining that oysters are held for 4 days. Observed stock tags neatly compiled and labeled in a notebook prior to the end of the inspection - COS. Keep up on your record keeping to avoid a major violation.

“Shellstock shall be obtained in containers that bear legible source identification tags. A food facility shall ensure that shellstock from one tagged or labeled container are not commingled with shellstock from another container with different certification numbers. Shellstock tags shall remain attached to the container that they are received in until the container is empty. The identity of the source of the shellstock sold or served shall be maintained for 90 days from the dates of harvest by using an approved recordkeeping system that keeps the tags or labels in chronological order correlated to the date or dates the shellstock is sold or served. The source of the shellstock on display shall be identified. Shellstock that are portioned or prepackaged shall have a copy of the corresponding shellstock tag. As discussed during the inspection, the core temperature of foods should not exceed 41/42F during a defrost cycle. Adjust/service/repair to cold-hold PHF at 41 F or below.

Conditions Observed: Measured poke and smoked salmon in far left side of seafood case to be 49 F; observed thermometer read 50 F. Manager removed food from unit and will request service - COS. Adjust/service/repair to cold hold at 41 F or below. Remove move case from service until repairs/servicing is complete.

Conditions Observed: Observed build-up on the following surfaces: on the blades on the Hobart cuber/tenderizer, between the flange of mixing arm and interior wall of grinder (showed observations to Meat Department Manager), and on auger seam (about two inches from interior wall). Remove build-up; through wash, rinse, and sanitize impact surfaces. Bring removable parts to the 2-part sink. Initinally measured chlorine in meat department sani-bucket to be 0 PPM. Operator refilled bucket. Measured chlorine to be 100 PPM. COS. Train staff to use test strips each time you make a sanitizing solution. Use 1 teaspoon of bleach per gallon of cool water. Measured QT in sanitizing bin at deli to be between 100 and 200 PPM. Reviewed manufacturer’s instructions. Adjust to sanitize at 200 PPM for QT. Consider using a measuring cup or similar tool to measure the volume of sanitizer that needs to be added to a full sink.
ROACHY SAYS:
“Food-contact surfaces and utensils shall be clean to sight and touch. Food-contact surfaces and multiservice utensils shall be effectively washed, rinsed, and sanitized to remove or completely loosen soils by use of manual or mechanical methods. Precleaning may be required. Manual sanitization shall be accomplished during the final rinse by contact with solution containing 100 ppm available chlorine, 200 ppm quaternary ammonium, or another approved sanitizer. Conditions Observed: Measured the following major tempertaure violations: chicken wing 118F deli hot case, jojo 112F deli hot case. Instructed employee to measure all foods and those below 135F to be discarded. Facility to use time labeling (mark foods with time 4 hours after cooking at which to discard) since hot hold unit is not holding foods at or above 135F. Employee did state there are plans to replace hot case. Please provide specs for new unit prior to installation. This major violation will require re-inspection on or after 11/16/18 to ensure time labeling is being used correctly or case has been serviced and can hold foods at or above 135F.
