08. Proper hot and cold holding temperatures.
Conditions Observed: Measured salads on the top shelf of the deli case to be above 50 F (pasta salad, 56 F; potatoe salad, 58 F; corn salad, 58 F). Deli Lead pulled salads and discarded - thank you. Remove and discard all foods in this fridge that are at or above 50 F. Per Deli Lead, service was requested earlier today. Adjust/service/repair to cold-hold all PHF at or below 41 F. Avoid using upper shelves until repair are complete. This violation requires a reinspection on/after 9/20/21.
ROACHY SAYS:
“Except during preparation, cooking, cooling, transportation to or from a retail food facility for a period of less than thirty minutes, when time is used as the public health control, or as otherwise specified, potentially hazardous foods shall be maintained at or below 41F or at or above 135F. The following foods may be held at or below 45F: raw shell eggs, unshucked live molluscan shellfish, pasteurized milk and pasteurized milk products in original sealed containers, potentially hazardous foods held during transportation. Conditions Observed: No time marking for foods at the self-service hot bar. Reviewed Time as Public Health Control with the Deli Lead today. Observed Deli Lead label each food item (using a dry erase marker on the sneeze guard) with the time to show four hours from when food was removed from temperature control. Please use time marking as discussed during the inspection. See regulation description; referred to your written procedure. This violation requires a reinspection on/after 9/20/21.
ROACHY SAYS:
“When time as a public health control is used, the following procedures shall be observed: food items shall be marked to indicate four hours past the time when the food was removed from temperature control, food shall be served or discarded within the four hour time limit. Written procedures shall be maintained in the food facility and made available to the enforcement agency upon request, that ensure compliance with this section and section 114002, for food that is prepared, cooked, and refrigerated before time is used as a public health control. Conditions Observed: Observed employee slicing whole tomatoes; per employee, tomatoes were not washed. Inspector explained that whole produce shall be rinsed in a clean food prep sink prior to slicing. Employee brought tomatoes to sink - COS. Always wash whole produce prior to cutting.

Conditions Observed: Observed labels for some Los Bagels cream cheeses lacked the place where cream cheese is packaged. Observed labels on portabella raviolis lacked a list of ingredients. Be sure that all labels on prepackaged foods conform to Sherman Food, Drug, and Cosmetic Law.

Conditions Observed: Observed minor volume of build-up on lower back side of the guard on the deli slicer - showed observations to Deli Manager. Remove build-up; clean and sanitize. Removable parts of the slicer can be brought to the 3-part sink. Observed minor volume of build-up in meat grinder - showed observations to Meat Department Lead. Discussed removing build-up using a mild cleanser or hot water. Note that sanitizers are most effective when applied to a clean surface.

Conditions Observed: No handwashing sink in the deli today. Per Deli Manager, sink was pulled for repairs. Repair/replace immediately to facilitate proper handwashing. No paper towels at handwash sink near prep sink. Manager provided paper towels. COS. Keep all handwashing sinks stocked with paper towels and pump soap at all times.
ROACHY SAYS:

Conditions Observed: Observed Vybes, a juice containing hemp derived CBD, offered for sale. CBD is not an approved food additive at this time. Store Manager pulled Vybes juices from the shelf. COS. All foods shall be unadulterated.

Conditions Observed: Measured chlorine in sani-bucket at meat department to be 50 PPM. Employee emptied bucket and refilled, using cool water and 3 caps full of bleach. Measured chlorine to be 100 PPM. COS. Use test strips each time you make a sanitizing solution to confirm the concentration is correct. See regulation description above. Observed build-up on the sides of the meat grinder. Per Employee, grinder was last used yesterday. Remove debris; wash, rinse, and sanitize grinder.
ROACHY SAYS:
“Food-contact surfaces and utensils shall be clean to sight and touch. Food-contact surfaces and multiservice utensils shall be effectively washed, rinsed, and sanitized to remove or completely loosen soils by use of manual or mechanical methods. Precleaning may be required. Manual sanitization shall be accomplished during the final rinse by contact with solution containing 100 ppm available chlorine, 200 ppm quaternary ammonium, or another approved sanitizer. Mechanical sanitization shall be accomplished in the final rinse by achieving a utensil surface temperature of 160F or by contact with solution containing 50 ppm available chlorine, 200 ppm quaternary ammonium, or another approved sanitizer. After cleaning and sanitizing, equipment and utensils shall be air dried. Mechancial warewash machines must be approved and installed and operated according to manufacturer's specifications.
