Conditions Observed: Observed employee rinse ladle in handwashing sink near the soda fountain. Inspector intervened; ladle was brought to the 3-part sink. Wash, rinse, and sanitize utensils at the 3-part sink. Use handwashing sinks for handwashing only.

“Handwashing facilities shall be provided within or adjacent to toilet rooms, food preparation, and warewashing areas. Handwashing facilities shall be clean, unobstructed, and accessible at all times. Handwashing facilities shall be provided with soap and sanitary single use towels in approved dispensers. 08. Proper hot and cold holding temperatures.

Conditions Observed: Measured foods in the front hot bar to be below 135 F today (orange chicken, 120.8 F; peking chicken, 114 F; mushroom, 108 F; green beans, 127 F). Observed green beans and orange chicken were refilled during the inspection - measured new batches to be above 135 F. COS. Measured wontons in south hot bar to be 130 F, 129 F. As discussed during the inspection, keep hot foods at or above 135 F by using lids, frequently stirring, or using deeper pans.

Conditions Observed: Observed black, fungus like growth on the interior of a chopped tomato in the top of the prep fridge. Discolored pieces of chopped tomato were removed and discarded - COS. Train staff to inspect food for evidence of contamination.

Conditions Observed: Observed excessive build-up on the interior of fridge doors (e.g., the 2-door upright fridge in the corner, the noodle fridge). Clean impacted surfaces; maintain tidy.

Conditions Observed: Observed serving utensils for rice resting in a container of water. Keep utensils in a clean and sanitized container or in water at or above 135 F.

Conditions Observed: Measured foods on the buffet to be below 135 F (chicken wing, 127 F; pot sticker, 128 F, beef, 113 F, fried shrimp, 124). Beef and broccoli and fried shrimp were replaced with a fresh batch during the inspection. See general notes. Hot hold foods at 135 F.

Conditions Observed: Measured whole mushrooms in the pork and mushroom dish to be 120 F. Throughly cook mushrooms (and others veggies) to 135 F prior to hot holding. Please provide proof of correction to your inspection prior to 4 PM on 7/7/21.

ROACHY SAYS:

“Fruits and vegetables that are cooked for hot holding shall be cooked to a minimum temperature of 135F. Single pieces of meat, fish, and raw shell eggs for immediate service, shall be heated to an internal temperature of 145F for 15 seconds. Comminuted meat, injected meat, raw eggs not for immediate service, or any food containing comminuted meat or raw eggs, shall be heated to an internal temperature of 155F for 15 seconds. Conditions Observed: Observed damp dishes returned to service. As discussed during the inspection, allow dishes to air dry before stacking or using to serve food. Avoid wet nesting.

Precleaning may be required. Conditions Observed: Observed the use of metal pans as utensils for various prepared foods today. Use an NSF-approved utensil that has a handle; keep handles up and out of food.

Conditions Observed: Observed sushi roller had donned gloves and began rolling sushi while the Inspector was checking the handwashing sink - no handwashing observed. Inspector explained that hands shall be washed immediately prior to rolling sushi - COS. Always wash hands before donning gloves.

“Food employees shall minimize bare hand and arm contact with nonprepackaged food that is in ready to eat form. Whenever gloves are worn, they shall be changed, replaced, or washed as often as handwashing is required. Single-use gloves shall not be washed. Conditions Observed: Observed black streaking, excessive mildew like build-up on white fixture in ice machine and in upper right corner - showed observations to FSM . Observed minor amount of pink sugar slime on side of ice dispenser at soda machine. Remove build-up; clean and sanitize. Apply sanitizer to a clean surface. This violation requires a reinspection on/after 12/5/19. Observed some food debris, oily build-up on 6 plates at hot bar in front of Mongolian BBQ. Employee brought to 3-part sink. It appears a customer may have spilled some food. Maintain clean utensils. Increase visual inspection of utensils.

Conditions Observed: Observed food debris, a nuance insect, and general build-up on floors, at the junction of the floors/walls in the dry storage area. This area and the space above the walk-in are very congested. Clean and organize. Remove items no longer in use. Keep this area tidy to allow for effective visual monitoring of vermin activity. Observed excessive debris on floor by soda stacks. Remove and clean.

ROACHY SAYS:

“All premises of a food facility shall be kept clean, fully operative, and in good repair. The premise of a food facility shall be free of litter and items unnecessary to the operation of the facility. Areas designated for employees to eat and drink shall be located so that food, clean equipent and utensils, linens, and single-use articles are protected from contamination. 01. Demonstration of knowledge; food safety certification.

Conditions Observed: Observed employees thawing/washing chicken in the wash and sanitize bin of the 3-part sink. Observed chicken was put in the walkin; observed bins and drainboards were correctly washed, rinsed, and sanitized. COS. Train employees in aproved thawing methods. Train employees to use the 3-part sink for dishwashing only.

ROACHY SAYS:

“The Person In Charge (PIC) and all employees shall have adequate knowledge and shall be properly trained in food safety as it relates to their assigned duties. The PIC shall have adequate knowledge of major food allergens, foods identified as major food allergens, and the symptoms that a major food allergen could cause. The PIC means a designated person who has knowledge of safe food handling practices and the major food allergens as they relate to the specific food preparation activities that occur at the food facility. “When time as a public health control is used, the following procedures shall be observed: food items shall be marked to indicate four hours past the time when the food was removed from temperature control, food shall be served or discarded within the four hour time limit. Written procedures shall be maintained in the food facility and made available to the enforcement agency upon request, that ensure compliance with this section and section 114002, for food that is prepared, cooked, and refrigerated before time is used as a public health control. Time only may not be used in Licensed health care facilities, public school cafeterias, or private school cafeterias. (114000)”

36. Equipment / Utensils approved; installed, clean, good repair, capacity.

Conditions Observed: Observed excessive build-up on white racks and beef liquid on wall in 2 door True by fryer. Showed observations to FSM. Clean and sanitze. Clean routinely to avoid build-up. Observed defunct 2-door freezer and several items no longer in use in the dry storage area. Remove items no longer in use. Observed build-up on metal plate on bottom of yogurt dispenser. Showed observations to Operator. Clean and sanitize.

ROACHY SAYS:

“Utensils and equipment shall be kept fully operative and in good repair. All new and replacement equipment shall be properly installed and be certified or classified for sanitation by an ANSI accredited certification program. Electrical appliances must meet UL standards. Single-use articles shall not allow migration of deleterious substances or impart colors, odors, or tastes to food. Multi-use food contact surfaces must be smooth, free of breaks, chips, and similar imperfections; free of sharp internal angles, corners, and crevices; finished to have smooth welds and joints; be accessible for cleaning and inspection. Unless specified, wood and wood wicker may not be used as a food-contact surface. Unless specified, copper and copper alloys such as brass may not be used in contact with a food that has a pH below six or for a fitting between a backflow preventer and a carbonator. Beverage tubing and cold-plate beverage cooling devices cannot be installed in contact with stored ice intended to be used as food. Equipment that is not movable must be installed to allow for cleaning in place. Cutting or piercing parts of can openers must be readily removable. Facilities that wash, rinse, soak, thaw, or similarly prepare foods shall be provided with a approved food preparation sink. Reservoirs that supply water to produce foggers must be cleaned and maintained. Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced or replaced if they can no longer be effectively cleaned and sanitized.
