02. Food safety certification, food handler card compliance

Conditions Observed: FSM certificate expired 4/18/2020. This is a repeat violation. Please obtain current certificate and have available at next inspection.

ROACHY SAYS:

“Food facilities that prepare, handle, or serve non-prepackaged potentially hazardous food, shall have an owner or employee who has passed an aproved food safety certification examination. Food handlers that prepare, handle, or serve non-prepackaged potentially hazardous food, shall obtain a valid Food Handler Card within 30 days after date of hire. (113947.1-113947.5, 113948)”

24. No rodents, insects, birds, or animals.

Conditions Observed: Flies (several) observed in facility today, and an exterior door of the dining area was standing open. Please either keep all doors closed at all times, or install screen doors (physical or air screen) on exterior doors of building to prevent ingress of vermin. Additional devices such as UV light traps may also be considered; recommend contacting a pest control professional. Note that since all food was covered and no evidence of likely contamination was observed, this is classified as a “minor” violation, but please note that since flies can transmit foodborne illnesses this is a potential risk.

ROACHY SAYS:

“A food facility shall be kept free of vermin. Live animals are prohibited from food facilities except as specified in 114259.5. Food facility employees shall not care for or handle animals that may be present in the food facility. Food facility employees are required to wash their hands after handling or caring for fish in an aquarium and/or shellfish, or crustacea, in display tanks and as specified in 114259.4. (114259.1, 114259.4, 114259.5)”

35. Warewashing: installed, maintained, used, Adequate Means to measure sanitizer

Conditions Observed: Test strips not available for measuring sanitizer (Sani-T-10). Please obtain and ensure available at all times.

ROACHY SAYS:

“Facilities that prepare food shall be equipped with a manual warewashing sink that has at least three compartments with two integral metal drainboards, except as specified in 114099(c). A warewashing sink shall not be used for handwashing except as specified in 114125(a). Sink compartments shall be large enough to accommodate immersion of the largest equipment and utensils used. Testing materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing. (114067(f,g), 114099, 114099.3, 114099.5, 114101(a), 114101.1, 114101.2, 114103, 114107, 114125(a))”

Conditions Observed: Food Safety Manager certificate expired on 4/18/2020. It was noted that due to the COVID-19 pandemic restrictions, it has been difficult to attend an FSM course. FSM did recently complete a Food Handler training course (exp. 5/24/2024) and she confirmed that she is registered for an in-person FSM course in Eureka on June 16, 2021. Please obtain current FSM certificate by the comply-by date indicated above and ensure it is kept on file at the facility and available for review at the next routine inspection; thank you.

Conditions Observed: Test strips at the facility for testing the concentration of San-T-10 sanitizer solution (used in the 3-comp warewash sink and in sani-buckets for wiping cloths) had expired in 2018. Please obtain new test strips in order to ensure that sanitizer concentration can be monitored and measured accurately; thank you.
