Conditions Observed: Measured foods in the deli prep fridge to be above 41 F (cheese, 45 F; chicken, 45 F; chopped onion, 46 F). Adjust/service/repair to cold-hold at 41 F or below. Observed pico de gallo resting on the shelf. Observed a box of leaf lettuce resting on the floor Promptly return foods to temperature control to keep foods out of the temperature-danger zone. Measured enchilada sauce nt eh steam table to 87 F. Per Employee, sauce was made today. Cook returned to flattop for reheating. Measured enchilada sauce to be 147 while on the flattop - COS. Always hot hold sauces and foods at 135 F or greater; throughly heat foods before putting in the steam table. This major violation was corrected.
ROACHY SAYS:
“Except during preparation, cooking, cooling, transportation to or from a retail food facility for a period of less than thirty minutes, when time is used as the public health control, or as otherwise specified, potentially hazardous foods shall be maintained at or below 41F or at or above 135F. Conditions Observed: Observed a bag of onions resting on the rack in the outdoor storage area. Observed bulk rice, beans, cinnamon sticks, and tortillas in the storage shed. Observed cases of tomato sauce on the floor of the storage shed. Observed two gnaw-like scratches on a box of tortillas. Observed moisture pooling on the floor around the container of rice. As discussed during the inspection, store open bulk foods and similar food items in a tight, weather proof, appropriately finished facility. Keep all foods at least six inches above the floor.

“Adequate and suitable space shall be provided for the storage of food. Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, vermin, or other forms of contamination or adulteration, and at least six inches above the floor. Conditions Observed: Observed caramelized onions put up in a plastic container prior to cooling using with an approved method. Measured onions to 187F. Reviewed rapid cooling with PIC. Onions were poured into a shallow metal container. COS. Facility will cool foods using metal pans and an ice bath. Frequently measure the temperature of coolings foods. Working containers of sanitizing solutions for storage of in-use wiping cloths shall be used in a manner to prevent contamination of food, equipment, utensils, linens, or single-use articles. Conditions Observed: Observed both the door to the shed and the back door to the facility to be open at the time of inspection. Keep doors closed and secured to prevent vermin ingress.
ROACHY SAYS:
“All premises of a food facility shall be kept clean, fully operative, and in good repair. The premise of a food facility shall be free of litter and items unnecessary to the operation of the facility. Areas designated for employees to eat and drink shall be located so that food, clean equipent and utensils, linens, and single-use articles are protected from contamination. Personal items shall be stored in a designated area to prevent contamination of food or utensils. Food prep sinks, warewashing sinks, and handwashing sinks shall not be used for the cleaning or maintenance of tools or cleaning supplies or to dispose of mop water and similar liquid wastes. A dedicated janitorial sink with a drain shall be provided and conveniently located. A separate room, area, or cabinet shall be provided for cleaning supplies. The facility shall be kept vermin proof. Insect electrocution devices shall retain the insect within the device and shall not be located over food or utensil handling areas. Conditions Observed: Observed excessive build-up of a white residue on the floor in the storage shed. Keep floors clean and free of debris; maintain flooring to allow for ample visual monitoring of vermin ingress/activity.
ROACHY SAYS:
“Food facilities shall be fully enclosed in a building consisting of permanent floors, walls, and an overhead structure that meets minimum standards. The walls and ceiling shall be smooth, durable, nonabsorbent, and easily cleanable. Flooring and base coving shall be smooth, durable, and made of approved nonabsorbent material that is easily cleanable. Floor surfaces shall be coved at the juncture of the floor and wall with a 3/8 inch minimum radius and shall extend up the wall at least 4 inches.
