CP - New Facility Inspection
01. Demonstration of knowledge.

Conditions Observed: Observed the facility has no food safety manager certificate. Please provide a copy of the certificate within 60 days. Gave operator food safety manager class information.

ROACHY SAYS:

“The Person In Charge (PIC) and all employees shall have adequate knowledge and shall be properly trained in food safety as it relates to their assigned duties. The PIC shall have adequate knowledge of major food allergens, foods identified as major food allergens, and the symptoms that a major food allergen could cause. The PIC means a designated person who has knowledge of safe food handling practices and the major food allergens as they relate to the specific food preparation activities that occur at the food facility. 41. Plumbing: proper backflow devices.

Conditions Observed: Observed the prep sink has no air gap. Please provide an air gap within 90 days. Observed the prep sink is adjacent to the handwash sink. Please provide a splash guard to protect food.

ROACHY SAYS:

“Steam tables, ice machines, ice bins, food preparation sinks, display cases, walk-in refrigeration units, and other similar equipment that discharge liquid waste shall drain into a floor sink with an air gap or other approved type of receptor. All plumbing and plumbing fixtures shall be installed in compliance with applicable local plumbing ordinances, maintained so as to prevent any contamination, kept clean, fully operative, and in good repair. The potable water supply shall be protected with a backflow or back siphonage protection device. Any hose used for potable water shall be of approved materials, labeled, properly stored, and used for no other purpose. Liquid drain lines shall not pass through an ice machine or an ice storage bin. (114171, 114190, 114192, 114193, 114193.1, 114199, 114201, 114269)”

49. Plan Review.

Conditions Observed: Observed the facility did not submit a one hour plan check package for review by DEH. Please submit a plan check package with a floor plan, hood specifications, and equipment specifications.

ROACHY SAYS:

“A person proposing to build or remodel a food facility shall submit complete, easily readable plans drawn to scale and specifications to the enforcement agency for review. Applicant shall receive plan approval before starting any new construction or remodeling of any facility for use as a retail food facility. Plans and specifications may also be required by the enforcement agency if the agency determines that they are necessary to assure compliance with the requirements of this part, including, but not limited to, a menu change or change in the facility's method of operation.
