Conditions Observed: Hot water at 2-compartment prep/warewash was initially measured at 113.2° F. Corrected on site; manager adjusted water heater, and at the conclusion of the inspection the hot water was measured at 120.2° F. Thank you for correcting this minor violation.

ROACHY SAYS:

“An adequate, protected, pressurized, approved potable supply of hot and cold water shall be provided at all times. Hot water shall be supplied at a minimum temperature of 120F when measured from the faucet. The temperature of water provided to handwashing facilities shall be at least 100F. Handwashing facilities equipped with non-adjustable faucets shall have their temperature set between 100F and 108F. Hot water shall be provided at the food preparation sink and janitorial sink. 44. Premises; personal/cleaning items; vermin-proofing.

Conditions Observed: Holes were observed in the ceiling around several pipes/conduits throughout the kitchen area (above dough prep area, pizza prep area, pizza oven, warewash area, and near walk-in cooler). Please seal all holes in ceilings/walls to prevent possible entrance of vermin. This violation requires correction as a condition of change of ownership permit approval. Please refer to Compliance Schedule Action Plan document for details and timing.

ROACHY SAYS:

“All premises of a food facility shall be kept clean, fully operative, and in good repair. The premise of a food facility shall be free of litter and items unnecessary to the operation of the facility. Areas designated for employees to eat and drink shall be located so that food, clean equipent and utensils, linens, and single-use articles are protected from contamination. Personal items shall be stored in a designated area to prevent contamination of food or utensils. Food prep sinks, warewashing sinks, and handwashing sinks shall not be used for the cleaning or maintenance of tools or cleaning supplies or to dispose of mop water and similar liquid wastes. A dedicated janitorial sink with a drain shall be provided and conveniently located. A separate room, area, or cabinet shall be provided for cleaning supplies. The facility shall be kept vermin proof. Insect electrocution devices shall retain the insect within the device and shall not be located over food or utensil handling areas. 45. Floor, walls, and ceilings: built, maintained, clean.

Conditions Observed: Paint was observed peeling from ceiling in multiple places (this is a repeat violation noted in prior inspections). Damage/wear was observed in various areas of the ceiling. Ceiling over dough rolling area comprised of “popcorn” style material and showing signs of wear, which could potentially introduce contamination to food below. Wall behind pizza oven was failing where previous oven vent had been. Walls and ceilings must be maintained clean and in good repair and must be smooth, durable, nonabsorbent, and easily cleanable. Please repair or replace peeling paint, damaged/failing ceiling areas, and failing wall area in order to ensure it is easy to clean and to prevent potential for contamination of food and food-contact surfaces. Please verify that “popcorn” ceiling is not made of an asbestos-containing material prior to disturbing/removing it. This repeat violation requires correction as a condition of change of ownership permit approval. Please refer to Compliance Schedule Action Plan document for details and timing.

Floor surfaces shall be coved at the juncture of the floor and wall with a 3/8 inch minimum radius and shall extend up the wall at least 4 inches. Routine Inspection
15. Food contact surfaces: clean and sanitized.

Conditions Observed: Can opener blade had food buildup and showed signs of wear. COS; can opener was cleaned and run through warewash machine. Wear and rust were also observed on parts of the can opener blade. Please maintain clean, and check maintenance schedule and ensure blade is replaced frequently enough to ensure that no cross-contamination of food occurs. A knife was observed being stored between the lids of the prep top table, in contact with hinges (a non-food-contact surface). Please ensure that knives and other food contact utensils are stored in such a way as to prevent cross-contamination.

ROACHY SAYS:

“Food-contact surfaces and utensils shall be clean to sight and touch. Food-contact surfaces and multiservice utensils shall be effectively washed, rinsed, and sanitized to remove or completely loosen soils by use of manual or mechanical methods. Precleaning may be required. Manual sanitization shall be accomplished during the final rinse by contact with solution containing 100 ppm available chlorine, 200 ppm quaternary ammonium, or another approved sanitizer. Mechanical sanitization shall be accomplished in the final rinse by achieving a utensil surface temperature of 160F or by contact with solution containing 50 ppm available chlorine, 200 ppm quaternary ammonium, or another approved sanitizer. After cleaning and sanitizing, equipment and utensils shall be air dried. Mechancial warewash machines must be approved and installed and operated according to manufacturer's specifications. Food contact surfaces, utensils, and equipment shall be cleaned and sanitized at the following times: before each use with different type of raw food of animal origin, when changing from raw food to ready to eat food, between uses with raw produce and potentially hazardous food, before using a thermometer, and any time during the operation when contamination may have occurred. Warewash sinks used to wash wiping cloths, wash produce, or thaw food must be cleaned and sanitized before and after these uses. Equipment, food contact surfaces, and utensils must be cleaned and sanitized throughout the day at least every four hours or as needed to prevent contamination. Conditions Observed: Recycling bin was overflowing. Per manager this is the largest bin available and pickup only occurs weekly. COS; manager called to order a second bin; thank you.

Conditions Observed: Observed buildup in soda nozzles at soda machine. Clean and sanitize soda nozzles regularly to prevent buildup. The soda nozzles were cleaned and sanitized on site. Thank you for correcting this minor violation.
