Conditions Observed: Measured cranberry juice 46F and orange juice 47F in 3 door refrigerator behind the bar. Adjust/repair/replace 3 door refrigerator to hold cold PHF at or below 41F at all times.

“Except during preparation, cooking, cooling, transportation to or from a retail food facility for a period of less than thirty minutes, when time is used as the public health control, or as otherwise specified, potentially hazardous foods shall be maintained at or below 41F or at or above 135F. The following foods may be held at or below 45F: raw shell eggs, unshucked live molluscan shellfish, pasteurized milk and pasteurized milk products in original sealed containers, potentially hazardous foods held during transportation. Potentially hazardous foods held for dispensing in serving lines and salad bars may be held at 45F, not to exceed 12 hours in a 24 hour period, if unused portions are discarded. Conditions Observed: Measured chlorine sanitizer 25PPM in bar dishwasher. Repair/replace dishwasher so that it provides chlorine sanitizer at 50PPM at all times. This is a repeat major violation that requires a billable reinspection in the amount of $133 to be conducted on or after 11/19/21, or you may provide proof of the correction to this office by 4pm on 11/18/21 in place of a billable reinspection.

Cooling shall be facilitated by one or more of the following methods: in shallow pans, separating food into smaller portions, adding ice as an ingredient, using an ice bath and stirring frequently, using an ice paddle, using rapid cooling equipment, or using containers that facilitate heat transfer. “Shellstock shall be obtained in containers that bear legible source identification tags. A food facility shall ensure that shellstock from one tagged or labeled container are not commingled with shellstock from another container with different certification numbers. Shellstock tags shall remain attached to the container that they are received in until the container is empty. The identity of the source of the shellstock sold or served shall be maintained for 90 days from the dates of harvest by using an approved recordkeeping system that keeps the tags or labels in chronological order correlated to the date or dates the shellstock is sold or served. The source of the shellstock on display shall be identified. Shellstock that are portioned or prepackaged shall have a copy of the corresponding shellstock tag. Except in accordance with an approved HACCP plan, molluscan shellfish life-support system display tanks shall not be used to display shellfish that are offered for human consumption. Conditions Observed: No food cards available for review at the time of inspection. Keep current California Food Cards for all food handlers on site; food cards shall be readily available at the time of inspection.

Conditions Observed: Observed bag of shrimp and calamari thawing in middle bin of the 3-part sink (no running water). PIC instructed employee to move thawing foods to the food prep sink and provide a sufficient flow of water - COS. Thaw foods using in approved method and in the correct location (e.g., a fridge at or below 41 F or in the food prep sink).
ROACHY SAYS:
“Frozen foods shall be stored or displayed in their frozen state unless being thawed in the following manner: under refrigeration that maintains the food temperature at 41F or below, completely submerged under potable running water for a period not to exceed two hours at a water temperature of 70F or below and with sufficient water velocity to agitate and flush off loose particles into the sink drain, in a microwave oven if immediately followed by immediate preparation, or as part of a cooking process. Conditions Observed: Observed a bowl resting on top of fries. Use a utensil that has a handle - keep handle above fries.

During pauses in food preparation utensils shall be stored with handles above the top of the food, on a clean sanitized surface, in running water, or in water that is at least 135øF. Single-use articles and multiservice utensils shall be handled, displayed, and dispensed so that contamination of food and lip-contact surfaces is prevented. Extra preset tableware shall be removed when a consumer is seated or cleaned and sanitized before further use. Pressurized cylinders shall be securely fastened to rigid structure. Conditions Observed: Thermometer in dessert fridge appears to be non-operational (units are obscured by staining). PIC provided a readable thermometer - COS.
ROACHY SAYS:
“An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be available to the food handler. Thermometers shall be calibrated in accordance with manufacturer's specifications as necessary to ensure their accuracy. A thermometer +/- 2 degrees F shall be provided for all refrigerators, hot and cold holding units, and high temperature warewashing machines. (114157, 114159)”
43. Toilet facilities: properly constructed, supplied, cleaned.
Conditions Observed: Waste basket in men’s room is overflowing such that used paper towels are in contact with the paper towel extending from the dispenser. Maintain trash/restrooms to facilitate hygienic handwashing.

Conditions Observed: No pump soap at kitchen/fry station handwashing sink. PIC brought the squeeze bottle from the handwashing sink at the grill. As discussed during the inspection, provide a pump soap for each sink.

Conditions Observed: Observed 15 to 20 black-grey 1-2cm droppings on floor between the wall and the back walk-in (window side). Showed observations to the PIC. Carefully remove droppings using PPE and 1:10 bleach solution. Increase visual monitoring; consider obtaining professional pest control.

Train staff to use test strips to confirm chlorine is entering the dishwasher. Observed black-brown build-up on white divider in ice machine. Empty ice machine and throughly clean to remove build-up. Sanitize impacted surfaces. As discussed in the inspection, clean weekly reduce/eliminate build-up. Provide proof of correction to your Inspector by 4 PM on 10/5/2020.
