Conditions Observed: Initially measured 0 PPM chlorine in the dishwasher. Discussed trouble shooting (i.e., inspecting the sanitizing line for bubbles, priming the line). Employee primed the line and ran the dishwasher; measured chlorine to be 50 PPM. COS. Use test strips daily to ensure chlorine is entering the system.

Conditions Observed: Observed two containers in/on bakery handwashing sink. Keep handwashing sink empty and unobstructed at all times; provide a bus bin for utensils.

Handwashing facilities shall be clean, unobstructed, and accessible at all times. Handwashing facilities shall be provided with soap and sanitary single use towels in approved dispensers. 22. Hot and Cold Water Available

Conditions Observed: Measured hot watter at the 3-part sink today to be 114 F. Adjust/service/repair to deliver hot water at 120 F or greater.

“An adequate, protected, pressurized, approved potable supply of hot and cold water shall be provided at all times. Hot water shall be supplied at a minimum temperature of 120F when measured from the faucet. The temperature of water provided to handwashing facilities shall be at least 100F. Handwashing facilities equipped with non-adjustable faucets shall have their temperature set between 100F and 108F. Hot water shall be provided at the food preparation sink and janitorial sink. Continue to prime/run dishwasher until a chlorine residual of 50 PPM is achieved. Provide proof of correction to your Inspector by 8/12/2020. Observed minor build-up on back of slicer guard. Showed observation to Owner. Carefully remove build-up; clean and sanitize.

Conditions Observed: Observed build-up on the following surfaces: bottom shelf in dry storage area, on black fixtures around yogurt dispenser, on top wire shelf in deli prep fridge at grill. Remove build-up; maintain clean and sanitized surfaces.

37. Equipment, utensils and linens: storage and use.

Conditions Observed: Observed handles for bulk foods utensils in bakery resting on top of foods (chocolate chips, coconut). Observed utensil handle buried in peanuts; scoop sent to warewash. As discussed during the inspection, keep all handles up and out of food.

“Clean equipment, utensils, linens, and single-use articles shall be stored at least six inches above the floor in an approved location within the fully enclosed permitted food facility. Clean equipment, utensils, linens, and single-use articles shall not be exposed to splash, dust, vermin, or other forms of contamination. During pauses in food preparation utensils shall be stored with handles above the top of the food, on a clean sanitized surface, in running water, or in water that is at least 135øF. Single-use articles and multiservice utensils shall be handled, displayed, and dispensed so that contamination of food and lip-contact surfaces is prevented. Extra preset tableware shall be removed when a consumer is seated or cleaned and sanitized before further use. Pressurized cylinders shall be securely fastened to rigid structure. 06. Hands clean and properly washed; gloves used properly.

Conditions Observed: No pump soap available in ladies’ restroom. Operator refilled dispenser. COS. Keep all handwashing sinks stocked with pump soap and paper towels at all times.

“Food employees shall minimize bare hand and arm contact with nonprepackaged food that is in ready to eat form. Whenever gloves are worn, they shall be changed, replaced, or washed as often as handwashing is required. Single-use gloves shall not be washed. Conditions Observed: Observed food debris on back lower ledge of guard on slicer. Carefully remove debris; clean and sanitize. Clean routinely to avoid build-up. Measured 0 PPM chlorine in dishwasher; observed container of concentrated sanitizer to be empty. Showed observations to dishwasher, who switched out the containers and primed the line. Dishwasher ran machine. Measured chlorine to be 50 PPM. COS. Train all dishwashers to use a chlorine test strip at the start of each shift to confirm chlorine is 50 PPM.

24. No rodents, insects, birds, or animals.

Conditions Observed: Observed one fly in the dinning room and 2-3 flies in the bakery. Increase pest control to remove flies from the facility.

ROACHY SAYS:

“A food facility shall be kept free of vermin. Live animals are prohibited from food facilities except as specified in 114259.5. Food facility employees shall not care for or handle animals that may be present in the food facility. Food facility employees are required to wash their hands after handling or caring for fish in an aquarium and/or shellfish, or crustacea, in display tanks and as specified in 114259.4. 34. Non-food-contact surfaces clean.

Conditions Observed: Observed staining, build-up on bottom shelf in dry storage area. Observed milky build-up around top of milk shake wand. Clean and sanitize. Maintain all surfaces.

Conditions Observed: No thermometer in the deli prep at the grill. Provide a thermometer for this unit.

ROACHY SAYS:

“An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be available to the food handler. Thermometers shall be calibrated in accordance with manufacturer's specifications as necessary to ensure their accuracy. A thermometer +/- 2 degrees F shall be provided for all refrigerators, hot and cold holding units, and high temperature warewashing machines. (114157, 114159)”

Routine Inspection
08. Proper hot and cold holding temperatures.

Conditions Observed: Measured veggie soup in the Vollrath cooker/warmer to be 127 F. Per PIC, soup was in the Vollrath at 9 am. Soup was discarded - COS. Revise hot holding method to ensure soup is at or above 135 F. Measured foods in the top of the deli prep to be above 41 F (blue cheese, 48 F; mayo, 48 F). Adjust/service/repair to cold at or below 41 F.

ROACHY SAYS:

“Except during preparation, cooking, cooling, transportation to or from a retail food facility for a period of less than thirty minutes, when time is used as the public health control, or as otherwise specified, potentially hazardous foods shall be maintained at or below 41F or at or above 135F. The following foods may be held at or below 45F: raw shell eggs, unshucked live molluscan shellfish, pasteurized milk and pasteurized milk products in original sealed containers, potentially hazardous foods held during transportation. Potentially hazardous foods held for dispensing in serving lines and salad bars may be held at 45F, not to exceed 12 hours in a 24 hour period, if unused portions are discarded. Food preparation shall not exceed two cumulative hours without a return to the required holding temperatures. (113996, 113998, 114037, 114343(a))”

31. Food storage; food storage containers identified.

Conditions Observed: Observed two bags of flour on the floor of the bakery. Keep all food at least 6 inches above the floor.

ROACHY SAYS:

“Adequate and suitable space shall be provided for the storage of food. Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, vermin, or other forms of contamination or adulteration, and at least six inches above the floor. Food shall not be stored in any of the following ways: in locker rooms, toilet rooms, dressing rooms, refuse rooms, mechanical rooms, under sewer lines that are not shielded to intercept potential drips, under leaking water lines, including leaking automatic fire sprinklers heads, or under lines on which water has condensated, under open stairwells or under sources of contamination. Working containers holding food or food ingredients that are removed from their original packages for use in the food facility shall be identified with the common name of the food. Non-prepackaged food may not be stored in direct contact with undrained ice. Products that are held by the permit holder for credit, redemption, or return to the distributor, such as damaged, spoiled, or recalled products shall be segregated and held in designated areas that are separated from food, equipment, utensils, linens, and single-use articles. Conditions Observed: Observed the use of dip cups to portion shredded carrots and crushed cookie. Discard deli cups. Use a utensil with a handle - keep handle up and out of food.

Conditions Observed: Unable to locate a themometer in the deli prep at the grill. Provide a thermometer for this unit.

ROACHY SAYS:

Routine Inspection
06. Hands clean and properly washed; gloves used properly.

Conditions Observed: Observed cook crack and whisk eggs, toss hash browns on grill, drop bread in toaster, and then wash hands. This is not correct - wash hands immediately after cracking raw eggs. Observed same cook place raw sausage patties on grill, and then remove gloves and wash hands. This is correct. Reviewed handwashing and proper glove use with manager. COS. Train all cooks to immediately wash hands after handling raw animal proteins and to be consent in proper handwashing. Please provide proof of training to this office by 1/10/19 .

Conditions Observed: Observed excessive build-up around yogurt dispensers. Remove build-up; wash, rinse, and sanitize surfaces routinely to avoid build-up.

ROACHY SAYS:

“Utensils and equipment shall be kept fully operative and in good repair. All new and replacement equipment shall be properly installed and be certified or classified for sanitation by an ANSI accredited certification program. Electrical appliances must meet UL standards. Single-use articles shall not allow migration of deleterious substances or impart colors, odors, or tastes to food. Multi-use food contact surfaces must be smooth, free of breaks, chips, and similar imperfections; free of sharp internal angles, corners, and crevices; finished to have smooth welds and joints; be accessible for cleaning and inspection. Unless specified, wood and wood wicker may not be used as a food-contact surface. Unless specified, copper and copper alloys such as brass may not be used in contact with a food that has a pH below six or for a fitting between a backflow preventer and a carbonator. Beverage tubing and cold-plate beverage cooling devices cannot be installed in contact with stored ice intended to be used as food. Equipment that is not movable must be installed to allow for cleaning in place. Cutting or piercing parts of can openers must be readily removable. 40. Wiping cloths: properly used and stored.

Conditions Observed: Measured QT in the sani-bucket to be less than 200 PPM. Operator refilled buckets; measured QT to be 200 PPM. As discussed during the inspection, always use QT test strips to confirm the QT is 200 PPM.

“Wiping cloths used to clean food spills shall be used only once or stored in a sanitizing solution of an approved concentration as specified in section 114099.6. Dry or wet cloths that are used with raw foods of animal origin shall be kept separate from cloths used for other purposes, cloths that come into contact with raw foods of animal origin shall be kept in a separate sanitizing solution. Wiping cloths shall be free of food debris and visible soil. Working containers of sanitizing solutions for storage of in-use wiping cloths shall be used in a manner to prevent contamination of food, equipment, utensils, linens, or single-use articles.
