Salsify (pronounced salsifee) looks like a wildflower but is really a vegetable.  The plant was imported to North America by colonists who used the root in their cooking. The plant was very popular during the 1700’s.  It can still be found today sometimes at Farmer’s Markets, etc. The early settlers called it oyster plant because the carrot-like roots supposedly taste like the sea food. Sometimes you can find it under that name instead.

It is supposedly delicious. Thinking about foraging for some? We have hundreds growing on our land.  I’ve never tried to cook them before but here’s how you can prepare it and a recipe for it if you are interested.
