Rita’s Margaritas and Mexican Grill in Eureka reopened today after being shut down by the Humboldt County Division of Environmental Health on Friday for failing to meet a number of California Retail Food Code requirements.

Upon today’s inspection — the restaurant’s fifth in a month — the county health inspector determined that Rita’s had corrected its previous issues with its faulty dishwasher, thermometer quantities and food cooling methods.

While the inspection grade was good enough to allow the business to reopen, yet another health inspection has been set for sometime on or after Dec. 16 due to an unsolved vermin hazard.

According to the report, the restaurant has unsuitable doorway gaps and several “wall penetrations” that serve as pipes where vermin could enter and exit the facility.
